Hummingbird Cupcakes

I just finished up a batch of Hummingbird Cupcakes. I love banana and pineapple, so needless to say this is one of my all time favorite cupcakes. If I could give you one tip when making this recipe, it would be to use (ripe) bananas. Not bananas that look perfect, but bananas that have brown in them. This really adds to the flavor. The brown baking cups I used are the standard liners, Cupcake Swirl carries.

October 1st Flip that Switch!
With Halloween approaching, you can bet your candy corn I am digging out the decorations! My house is "that" house on the block that is decorated for every holiday. I believe with all the work it takes putting up the decorations, you should enjoy them as long as you can! Halloween falls on a Friday night this year, so we (neighbors) are expecting a lot more "trick-or-treaters." Last year we actually ran out of candy-what a FAUX PAS!! That was 140 regular size candy bars on a school night! October is a busy month! I have- wedding shower cupcakes, a wedding cake, more cupcakes and Halloween parties! So, back to work on the decorating and I'll be ready to flip that switch Wednesday night!

Size does matter...

when you are frosting a cupcake you better believe it! Have you ever tried to get the perfect swirl with the not so perfect spatula? This is my very favorite spatula-LOVE IT! I actually have five of these bad boys in my kitchen drawer. This angled spatula measures 4 1/2" a must have for the professional froster! Just added under "Frosting Tools."

It's getting closer!
Fall is just around the corner! I didn't think it could happen, but it was considerably cooler Sunday for Labor Day. We had a nice family BBQ, dining outside al fresco. I made coconut and chocolate cupcakes (some in ice-cream cones- so retro) for dessert. I ordered my Halloween supplies last week, so come back to take a peek. There is some cute stuff for cupcakes! Have any of you read the new Sept/Oct (Paula Deen) magazine? It has great Halloween ideas as well as a recipe for Pumpkin Crisp. I can't wait to try it out. Send me a comment if you decide to make it anytime soon. I want to thank all you visitors to my site for leaving such great comments! I appreciate them! Have a great Tuesday!
